Preheat the oven to 425° and cut the cauliflower into bite-size florets. Place the pieces on parchment paper on a cookie sheet and drizzle EVOO and sea salt. Once the oven has preheated, let it roast for 15 minutes or until slightly browned.While it’s cooking, make the dressing:
*1-2 tbsp- honey
*2 tbsp- Coconut Oil
*Salt & Pepper to taste
Depending on how spicy you like it, you may want to add less honey. After its roasted, take it out of the oven and put all of the cauliflower in a bowl and mix in the dressing. Once it is spread evenly, spread it back out on a new piece of parchment paper on a cookie sheet and stick it back in the oven for another 5 minutes or so. Serve as is or with blue cheese dressing for dipping.
Sweet Potato Hamburger Buns:
Preheat the oven to 425° and slice a good sized sweet potato into 1/4 thick rounds (big enough to serve as the bread in the sandwich). Next, place the slices on a parchment paper-lined on a cookie sheet. Drizzle olive oil (or coconut oil) over each side along with some kosher salt, pepper, paprika, and cumin. I just eyeball it to make sure each slice has oil and spices on it. Place it in the preheated oven for about 25 minutes. While they cook, grill your burger to your liking.
